Chicken, Walnut & Cranberry Salad
A modern take on a classic chicken salad is delicious piled high on a toasted slice of good bread, in a wrap with salad or on top of a bowl of greens.

Ingredients
2 ½ cups shredded chicken
½ cup good quality mayonnaise
½ cup roughly chopped Walnuts
½ cup Pumpkin Seeds, toasted
⅓ cup Dried Cranberries
¼ red onion, finely diced
1 teaspoon dried dill
1 teaspoon wholegrain mustard
2 teaspoons lemon juice
Salt and cracked black pepper to season
Instructions

Combine all the ingredients in a bowl and mix well. Taste and season generously with salt and pepper.

Serve piled on a rustic slice of sourdough and or salad greens.
