Fresh Fruit Nutty Crumble

So fresh, healthy and playful. Pair the crumble topping with the best and freshest seasonal fruit for a treat that will become a firm favourite.

Ingredients

Crumble topping

½ cup Dates

½ cup Roasted Unsalted Supreme Nuts

½ cup shredded coconut

1 tablespoon olive oil

½ teaspoon vanilla extract

Pinch sea salt

Fruit base

4 ripe nectarines or peaches or 6 plums, thinly sliced

2 punnets blueberries

1 tablespoon lemon juice

1 tablespoon honey or maple syrup

Instructions

Place all the crumble topping ingredients into a food processor and pulse for 2 minutes until the mixture resembles very coarse crumbs. You may need to scrape the sides a couple of times.

When ready to serve combine the fruit with the lemon juice and honey. Toss to evenly coat. Place fruit in your serving dish. Scatter the crumble on top.
