Seedy Schnitzel Strips

This is the most delicious, crunchy crumbed chicken you’ll ever make. Serve with a fresh salad to create a meal that is nutritious and guaranteed to be a hit with the whole family.

Ingredients

1 ½ cups panko breadcrumbs

3 tablespoons Hemp Seeds

2 tablespoons Sesame Seeds

1 tablespoon Chia Seeds

½ teaspoon salt

500-600g chicken breast

2 eggs, lightly whisked

Oil for frying

Mix the breadcrumbs and seeds. Stir through the salt.

Cut the chicken in half through the middle of the breast to create thinner pieces. Cover with a piece of baking paper and use a meat mallet or rolling pin to pound the chicken until flat. Cut chicken into 3-4 cm wide strips.

Place the eggs in a shallow bowl. Dip each piece of chicken in the egg and then coat well in the breadcrumbs and seeds. Repeat until all the chicken is crumbed.

Heat 1 cm of oil in a frying pan over a medium heat. Cook the chicken until golden on both sides and no longer pink in the middle. Add extra oil to the pan if it becomes too dry.
