White Chocolate & Macadamia Cookies

Ingredients

¾ cup plain flour (or wholemeal)

½ tsp baking soda

¼ tsp salt

⅓ cup coconut sugar or brown sugar

¼ cup coconut oil (melted) or olive oil

1 egg

1 tsp vanilla extract

½ cup white chocolate chunks or chips

⅓ cup roast salted macadamias, roughly chopped

Instructions

Preheat the oven to 180°C (fan bake) and line a baking tray with paper.

In a bowl, whisk together flour, baking soda, salt, and sugar.

In another bowl, whisk the coconut oil, egg, and vanilla until smooth.

Combine the wet and dry ingredients until just mixed.

Fold in white chocolate and macadamias.

Roll into tablespoon-sized balls, place on tray, and gently flatten.

Bake for 10–12 minutes, or until lightly golden on the edges.

Cool on the tray for a few minutes before transferring to a wire rack.
