Ingredients
4 cups freshly picked basil leaves
1 cup CareFillery Unsalted Roasted Cashew Nuts
1 large clove garlic, chopped
150ml olive oil
Finely grated zest of 1 large lemon
1 cup finely grated Parmesan
Salt and freshly ground black pepper
Juice of 1 large lemon
Instructions

Place the basil, cashew nuts, garlic, and a little olive oil in a food processor.

Pulse until the mixture is ground.

Gradually blend in the remaining olive oil, then stir in the lemon zest.

Fold the Parmesan into the mixture, taste, and season with salt and pepper. Finally, stir in the lemon juice.

Transfer the pesto to a jar or container with a tight-fitting lid. Drizzle a little olive oil over the top to preserve freshness.
