Ingredients

½ cup Prunes, chopped

1 cup water

100g dark chocolate drops (we love Donovans Chocolate)

¼ cup black coffee

2 large eggs

½ cup firmly packed soft brown sugar

1 tsp pure vanilla extract

¼ cup corn flour

1 tsp baking soda

¼ cup cocoa powder, sifted (we love Donovans Chocolate)

¼ cup Ground Almonds

½ cup Walnuts, roughly chopped

50ml cream

Instructions

1

Place prunes and water in a small saucepan over a medium-low heat and simmer until the prunes are very tender and liquid has mostly reduced. Set aside to cool

2

Preheat oven to 180C

3

Place chocolate and coffee in a heatproof bowl and set over a saucepan of gently simmering water to melt, or microwave in short bursts until melted. Stir until smooth then combine with the prune mixture

4

Place eggs, sugar and vanilla in a bowl and whisk with an electric mixer until thick and pale

5

Fold in the chocolate prune mixture

6

Sift cornflour, baking soda and cocoa together and gently fold into the chocolate mixture to just combine

7

Fold in the almonds and walnuts

8

Spoon the mixture into 6 x 1-cup capacity baking dishes, set on an oven tray

9

Bake for 20 minutes or until a skewer inserted in the centre of one comes out moist but clean. Drizzle with a little chocolate sauce and enjoy!

10

To make chocolate sauce, melt chocolate and cream together and whisk until smooth. Serve warm
