Cranberry, Walnut & Apple Salad

4 cups baby spinach leaves

½ cup cranberries

½ cup NZ walnuts (lightly toasted, if preferred)

1 Granny Smith apple (thinly sliced)

¼ cup red onion (thinly sliced)

⅓ cup crumbled feta cheese

For the Dressing

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

In a large bowl, combine the spinach, cranberries, walnuts, apple slices, red onion, and feta cheese.

In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.

Drizzle the dressing over the salad, toss gently, and serve immediately.
