Easy Florentine Slice

A playful version of the classic Italian treat. You will find this incredibly easy to make and impossible to stop eating. Perfect for festive entertaining.

Ingredients

3 cups cornflakes

70g Raisins or Sultanas

70g Sliced or Whole Cranberries

100g Choice Apricots, diced

50g Roasted Unsalted Peanuts

100g Deluxe Natural Nuts, roughly chopped

50g Pumpkin Seeds

Zest of 1 orange

Zest of 1 lemon

395g tin condensed milk

200g 62% dark chocolate

Instructions

Preheat oven to 170 degrees celsius.

Line a 20 x 30cm slice tin with baking paper.

Place all the dry ingredients except the chocolate in a large bowl, add the zest and pour over the condensed milk. Mix very well and press firmly and evenly into the prepared tin. Bake for 20 minutes until golden.

Place on a rack to cool completely.

Carefully place the slice upside down on a board. Melt the chocolate carefully (microwave or in a heatproof bowl over a pot of hot water) and use a spatula to spread the chocolate over the underside. Put in the fridge to set for one hour.

Cut into pieces. Store in an airtight container for up to 1 week.
