Oat Plus Banana Hotcakes

This nutritious breakfast is full of fibre and goodness. Quick enough to make on a weekday morning and especially delicious when served with fresh berries or whatever seasonal fruit you love.

Ingredients

1 banana

1 cup (90g) oats plus

2 eggs

1/3 cup Greek-style yoghurt (dairy or coconut)

1 teaspoon baking powder

Instructions

Peel and mash the banana. Add the yoghurt and egg. Mix well. Stir through the Oats Plus and baking powder.

Heat a little coconut oil in a skillet over a medium-low heat. Dollop 1/3 cup of mixture into the pan and use the back of a spoon to spread it out into a circle that is roughly 1cm thick. Cook for a couple of minutes on each side until golden and cooked through.

Keep the hotcakes warm while you cook the remaining batter.

Serve with maple syrup and fresh fruit.
