Plant based Mince on Toast
Classic kiwi mince on toast gets a plant-based overhaul here. Packed with veges and plant protein, this hearty dish serves up a big helping of nutrition, comfort and deliciousness.

Ingredients
1 brown onion, finely chopped
3 garlic cloves, crushed
1 cup Bolognese Vegan Mince Mix
2 cups vegetable stock
1 cup boiling water
350g grated butternut pumpkin
120g frozen spinach, thawed
½ cup frozen peas
Olive oil for sautéing
To serve: toasted sourdough slices, fresh parsley, sliced avocado
Instructions
Heat a generous glug of oil in a sauté pan over a medium heat. Cook the onion for 5 minutes until translucent. Add the garlic and cook for a further 2 minutes.
Add the Bolognese Vegan Mince Mix, vegetable stock, water and grated butternut. Bring to a boil and then simmer rapidly for 15 minutes.
Stir through the frozen spinach and peas. Allow to heat through for a minute or so.
Serve on thick slices of toasted sourdough with fresh parsley and sliced avocado.
