Toast the Omega Mix in a dry pan over a medium heat for about 5 minutes until lightly golden. Leave to cool before adding the the salad.

Whisk together the tahini, soy sauce, lemon juice and water. Add this to a large bowl along with the beetroot, carrots and raisins. Toss to evenly coat the salad. At this stage the salad could be placed in the fridge for up to 1 day before serving.

Add half of the toasted seeds just before serving and mix well. Sprinkle the remainder on top as a garnish.
