Vegetarian San Choy Bau

This delicious, wholefood mince is simple to make and serves up a quick nutritious meal. You could add vermicelli noodles or steamed rice to make this meal stretch further.

Ingredients

4 garlic cloves, finely diced

2 teaspoons finely grated ginger

250g mushrooms, roughly chopped (Swiss brown or button mushrooms)

¾ cup Deluxe Natural Nuts

1 block tofu, grated

1 spring onion, thinly sliced

Sauce

5 teaspoons soy sauce or tamari

1 teaspoon sesame oil

2 teaspoons maple syrup or honey

2 teaspoons vinegar (rice wine or apple cider)

Salt and pepper to season

Oil for frying

To serve

Lettuce leaves

Shredded carrot

Sesame seeds

Fresh coriander

Instructions

Heat a glug of oil in a sauté pan over a medium-high heat. Add the garlic and ginger and cook for 1-2 minutes.

Add the mushrooms along with a pinch of salt and cook, stirring often until the mushrooms are glossy and reduced in volume by roughly half.

Sprinkle over the nuts and sauté for another 2 minutes before adding the grated tofu. Raise the heat to high and sauté for 2 minutes until piping hot, tossing often.

Whisk together the sauce. Pour into the pan and toss to evenly coat. Cook for 1 minute before removing and stirring through the spring onion. Taste and season and desired.
