Retro Cheese Ball

This delicious blast from the past will delight your guests. It is easy to make, endlessly customisable and can be prepared up to 24 hours in advance.

Ingredients

Cheese Ball

250g cream cheese

¾ cup grated cheese

1/4 teaspoon garlic powder

2 spring onions, green part thinly sliced

1 teaspoons fresh thyme leaves or ½ teaspoon dried

½ cup Sliced Cranberries

Pinch cayenne pepper

Generous pinch salt

Generous grind black pepper

Coating

½ cup Natural Pistachios Shelled, finely chopped (could also use Almonds or Walnuts)

Handful fresh mint or parsley, finely chopped

¼ cup Sliced Cranberries, diced

Instructions

Take the cream cheese from the fridge 1 hour prior to preparation.

Place all the ingredients for the cheese ball into a food processor. Run until all the ingredients are evenly combined. You may need to stop and scrape down the sides once or twice. Taste and adjust seasoning as desired.

Place the cheese mixture into a bowl. Place in the fridge to firm up for 20 minutes. Use damp hands to form into a ball.

Mix all the coating ingredients in to a shallow dish. Roll the cheese ball in this until evenly coated. Put into an airtight container in the fridge until 20 minutes before serving.
